Domaine Dauvissat Père et Fils Chablis 2018 France

After tasting dozens of wines on "Chablis day" at the Grands Jours de Bourgogne in March 2016, we kind of stumbled our way onto Domaine Dauvissat toward the end of the tasting. Domaine Dauvissat is a small, family-owned winery producing the kind of quality, quintessential Chablis we had hoped to find that year. In addition, they owned vineyard parcels in some of the more coveted parts of Chablis which led us to believe the Dauvissat family had probably been around these parts for a long time. Ask anyone who genuinely knows Chardonnay, and specifically Chablis Chardonnay, and they will likely use descriptors like pure, acidity, mineral, and citrus. Chablis is everything California Chardonnay is not. No big alcohol, no big oak, and none of that butter scotch and popcorn - only big acidity, flinty mineral, crisp apple and citrus flavors and a freshness that defines what Chablis tradition is all about. Stripped down naked without the influence of oak barrel aging just as Chardonnay was meant to be - pure in every sense of the word. How do you spell WOW? I spell it C-H-A-B-L-I-S. Quenching and done just right!
