Domaine Jean Dauvissat Pere & Fils Chablis France

It was Day 1 of the Grands Jours de Bourgogne - a massive, 5-day tasting event held every other year in Burgundy, France. It was March, and not particularly warm, so getting revved up for a bunch of acid blasting Chablis took a little internal motivation. But it didn't take long, and after a bit of mingling, we happened onto Domaine Jean Dauvissat. Every Chablis we tasted at the Dauvissat table was spot on and displayed all the crisp and racy traits we expect from the good stuff. But even better than that, the Dauvissat wines had a delicious ripeness that many producers can't seem to achieve in this hard-to-ripen part of northern Burgundy. A lot of Chablis begs the question - "where's the fruit", but the Dauvissat style showcases bright citrus, and dare I say, fat flavors of pear - at least for Chablis, that is!
